Two Economical Chicken Recipes - Marinated Gourmet Baked Chicken & Chicken Divan

Chicken has always been a favorite American food. It is also one of our healthiest meats. If you are looking for new ways to serve chicken to your family and friends, give these recipes a try. The Marinated Gourmet Baked Chicken will serve ten making it great for a crowd or large family. The Chicken Divan is always a good choice and might be a good way to get your children to eat broccoli.

MARINATED GOURMET BAKED CHICKEN

10 boneless, skinless chicken breasts halves

2 cups sour cream

1 tbsp Worcestershire sauce

2 tsps salt

1 1/4 tsps paprika

1 1/4 cups fine bread crumbs

butter, melted

Place chicken in a shallow baking dish; set aside. Combine the sour cream, Worcestershire sauce, salt and paprika. Pour mixture over the chicken and turn chicken breasts to coat. Cover the dish and refrigerate overnight. The next day, coat the chicken breasts, one at a time, in the bread crumbs being sure to coat both sides. Butter a baking pan and place the chicken pieces in the pan. Cover and chill 1 1/2 hours or longer. Bake, uncovered, at 325 degrees for 1 1/4 hours or until golden and tender. Baste with melted butter occasionally during baking.

Yield: 10 servings.

CHICKEN DIVAN

8 skinless, boneless chicken breast halves

1 pkg (10-oz) frozen chopped broccoli

Vegetable oil cooking spray

1/4 can cream of chicken soup, undiluted

1/4 can cream of potato soup, undiluted

1/2 cup milk

1 1/2 tsp lemon juice

2 tbsp grated Parmesan cheese

Put chicken in a large saucepan with enough water to cover. Bring chicken to a boil, reduce the heat and simmer for about 20 minutes or until chicken is no longer pink; drain well. Chop chicken and set aside.

Cook broccoli according to the package directions, omitting the salt and the butter; drain well.

Spray a 2-quart baking dish with nonstick vegetable oil spray and put broccoli in bottom of dish. Place the chopped chicken over the broccoli. In a small mixing bowl, combine the cream of chicken soup, cream of potato soup, milk, and lemon juice. Sprinkle the Parmesan cheese over the top. Bake in a 350 degree oven for approximately 25 minutes or until heated through.

Oven Baked Chicken Breast - Money Saving Tips For a Healthier Meal

Oven baked chicken breast is an easy dish to make. It requires little preparation time, does not need to be watched closely while baking, and tastes great. Boneless skinless chicken breast recipes are very alluring as an entrée for either lunch or dinner and everyone seems to like them.

However, you may want to know how to save money when preparing them.

Meat Preparation To Save Money

The cost of boneless skinless chicken breasts may be prohibitive when compared to other meats. Processing a whole chicken into more usable parts at home will help you save money.

A whole chicken is usually much less expensive than boneless skinless chicken breasts because of less handwork by the butcher. If you perform the same tasks the butcher would to reduce an entire bird into more usable pieces then you are applying your labor instead of paying cash for it at the store.

It is not difficult to make boneless skinless chicken breasts from a whole chicken. You can often find whole chickens on sale so buying a few while on sale and storing the butchered pieces in your freezer will save you money.

A side benefit is that you end up with skin and bones, which can be boiled and converted to make rich chicken broth. Broth can be used for chicken soups of all types or in other recipes for flavoring.

By allowing the fat to float to the top of your finished broth while it is stored overnight in the refrigerator will allow you to easily remove it. A low-fat chicken broth is much healthier and more flavorful.

Chicken broth can be used in many ways when you are formulating your healthy diet plan. To eat healthy you must plan ahead. Otherwise you will eat whatever is available when you get hungry.

Unfortunately, this is usually fast food and fast food is bad for you.

Oven Baked Chicken Breast Recipes

Oven baked chicken breast recipes are easy to make. Whether served for lunch or dinner they will add a reliable source of protein to your meals.

Try this simple yet elegant dish for an easy family-friendly meal.

Marinated Chicken Breasts With Dip

Place boneless skinless chicken breasts in a bowl or plastic bag. Add your favorite Italian or other olive oil based salad dressing. Cover bowl or seal plastic bag. Allow to marinate in the refrigerator overnight.

When ready to bake place marinated breasts into an oven-safe pan or baking dish. Bake uncovered at 350 degrees for approximately 30-45 minutes. The cooking time will differ depending on the thickness of the chicken breasts.

They are done when cooked through with no red blood or meat visible when a cut is made in the thickest portion of the breast.

You can serve the chicken with the same dressing you marinated it in or another to use as a dip. Creamy dressing such as Ranch or blue cheese (as well as Roquefort) work great as dips.

Serve with a large salad containing many different colorful vegetables and wild rice cooked in chicken broth from your homemade chicken broth.

Oven-Baked Chicken Parmesan

Chicken Breasts
1 Egg, beaten with a splash of water
3/4 cup Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 large jar marinara sauce
1 cup shredded low-fat mozzarella cheese

Mix Italian breadcrumbs and Parmesan cheese.

Dip chicken breasts in egg wash (beaten egg and a splash of water) then roll in Italian seasoned breadcrumbs and Parmesan mix. Bake uncovered in a glass baking dish at 350 degrees for 30-45 minutes depending on the size of the chicken breasts.

Breasts are done when cooked through with no red blood or meat visible when a cut is made in the thickest portion of the meat.

Warm the marinara sauce in a covered sauce pan.

Place cooked chicken breasts on a serving platter, spoon marinara sauce over them, and then sprinkle with low-fat mozzarella cheese.

Serve remaining marinara sauce over whole grain pasta (whole wheat, spelt, brown rice, etc.) and garnish with grated Parmesan cheese.

Begin the meal with a large salad. An olive oil based dressing is preferred because of the health benefits this healthy oil offers.

Baked Chicken Drumstick Recipe

Chicken drumsticks are a children's and adults favourite alike being really simple to prepare and cook especially in the oven. But what is the best way to bake chicken drumsticks and what is the best recipe to bring out the full flavour of the leg meat? I think we all know about KFC chicken and the crispy seasoned flour which is deep fried in hot oil giving wonderful results. I also know that many people have tried and failed to understand exactly what is the secret ingredients of KFC chicken but as far as I know this still remains a closely guarded corporate secret and rightly so.

But what other seasonings can we use to flavour our baked chicken legs? one of my favourite (and my kids!) is using crushed cornflakes as the basis of what would normally be breadcrumbs. This gives a much lighter texture to the chicken and remains crunchy and flavoursome after cooking. This is also a great chicken drumstick recipe which you can get the kids involved. But do not be fooled, just because its great for the children doesn't mean us adults will not enjoy it, give it a try and you will see what I am talking about, scrumptious!

Baked Chicken Legs Recipe (coats around 8 chicken legs or quarters)

8 x Chicken legs or quarters with the skin removed (really do ensure you remove the skin, you will get a watery effect under the skin itself if you do not remove it first)
3 x Cups of ground up cornflakes (you can also use Weetabix!)
2 x Teaspoons of Cayenne pepper
2 x Teaspoons of mild Curry powder
1 x Teaspoon of garlic powder
1 x Teaspoon of salt
1/2 Cup of plain flour
1/2 pint of milk
2 x Eggs beaten

Method

1. Pre heat oven to 200 degrees and remove skins from chicken legs
2. Place flour and salt in a clean bowl
3. Place beaten eggs and milk into another bowl
4. Crush cornflakes to breadcrumb size in a clear, clean, plastic bag and add the spices shaking to mix thoroughly
5. Coat chicken in the flour shaking off any excess and dip into the milk/egg mixture and carefully place into the bag. Repeat for four chicken legs and then gently shake to coat evenly.
6. Repeat the above for the remaining 4 chicken drumsticks.
7. Place the coated chicken drumsticks on a baking tray and give a spray of oil.
8. Bake in the oven for around 40-45 minutes until golden and cooked through.

A really tasty and crunchy chicken leg coating which is great fun to make. Enjoy your cooking!
